Indonesian galangal
Galangal covers two different plants. Greater galangal, lengkuas in Indonesian, is the mild rhizome of Southeast Asian cooking. Lesser galangal is smaller, sharper and used mainly in traditional medicine and extraction. Ordering by the English word alone leaves the choice to the exporter.
How it leaves the country.
- Whole dried slices
- The export form for spice packers, sold on thickness, colour and dryness.
- Ground
- For food manufacturing, and the form where species substitution becomes invisible.
- Fresh
- A separate trade with a cold chain and short shelf life, mostly regional.
- Oil and oleoresin
- Extracted for flavour and traditional medicine, with its own specification.
How it is graded.
A trade convention rather than a standard. Species first, then the properties that follow from drying.
- Two species, one word
- Alpinia galanga is greater galangal and Alpinia officinarum is lesser. They taste different and they go to different buyers. Name the species in Latin.
- Drying decides colour
- Fast clean drying keeps slices pale. Slow drying in humid air darkens them and brings mould, and it cannot be corrected afterwards.
- Slice thickness
- Thicker slices dry slower and rehydrate slower. It is a specification point that changes both quality and how the buyer uses it.
- Volatile oil
- What extraction buyers contract on, and it falls with age and poor drying. The figure belongs on the shipped lot.
- Mould toxins
- A dried rhizome from a humid climate. The recurring rejection reason across Indonesian dried agriculture applies here.
How it is packed.
- Sacks with a liner
- Dried slices take up moisture readily and mould follows. The liner does real work on a tropical routing.
- Volume rather than weight
- Light and bulky in slice form, so a container fills by space.
- Insects
- Dried plant material attracts pests, and infestation at arrival can condemn a consignment.

Questions buyers ask.
Which galangal do I want?
Greater galangal for Southeast Asian cooking, which is what most food buyers mean. Lesser galangal for traditional medicine and extraction, where the sharper profile is the point. Write the Latin name, because the English word covers both.
Is it the same as ginger?
Related and not interchangeable. Galangal is sharper and more pine-like where ginger is warm and citric. A recipe built on one will not accept the other, which is a substitution buyers occasionally accept unknowingly in ground form.
Why are some slices dark?
Slow drying in humid air. It is a record of the process rather than a defect in the rhizome, and pale slices cost more because fast clean drying takes equipment or good weather.
