Indonesian dried ginger
Indonesia grows three ginger types the trade distinguishes clearly: large white, small white and red. They are not interchangeable, they go to different buyers, and what separates a good lot from a poor one is how fast and how cleanly the rhizome was dried.
How it leaves the country.
- Whole dried
- Sliced and dried, sometimes peeled. The export form for spice packers, sold on colour, thickness and freedom from mould.
- Ground
- Milled for food manufacturing. Convenient and it removes any possibility of judging the material by eye.
- Fresh
- A separate trade with a cold chain, short shelf life and its own plant health requirements. Different buyers entirely.
- Oleoresin and oil
- Extracted rather than dried. A flavour and fragrance product with its own specification, covered on the ginger oil page.
How it is graded.
Grading here is a trade convention around variety, size and appearance. The measurable properties matter more, and they follow from the drying.
- Three varieties, three uses
- Large white for volume culinary use, small white for a stronger flavour, red for traditional medicine and extraction. Name the variety on the order.
- Drying decides colour
- Fast clean drying gives pale slices. Slow drying in humid air gives dark ones and mould. The colour is a record of the process.
- Peeled or unpeeled
- Peeling is labour and it changes appearance and price. It also removes some of the material buyers value, so decide against the application.
- Volatile oil
- What flavour buyers actually contract on. It falls with poor drying and with age, so the figure belongs on the shipped lot.
- Mould toxins
- The recurring rejection reason across Indonesian dried agriculture, and ginger is no exception. Test the lot rather than the supplier's history.
How it is packed.
- Woven sacks with a liner
- Dried rhizome takes up moisture readily and mould follows. The liner is doing real work on a tropical routing.
- Volume rather than weight
- Light and bulky in whole slice form, so a container fills by space with weight to spare.
- Insects
- Dried plant material attracts pests, and infestation found at arrival can condemn a consignment. Treatment and sealed packaging belong in the specification.

Questions buyers ask.
How does Indonesian ginger compare with Chinese or Indian?
China dominates volume and India grows a great deal for its own market. Indonesian ginger is bought for the varieties it grows, red ginger in particular, and for buyers already sourcing other Indonesian spices who want to consolidate. On plain culinary large white, it competes rather than leads.
Why are some slices dark?
Slow drying, usually in humid air or under intermittent rain. It is a record of the process and it cannot be corrected afterwards. Pale slices cost more because fast clean drying takes equipment or good weather and attention.
Should I buy whole or ground?
Whole if you can mill, because it can be inspected by eye and it is much harder to adulterate. Ground where convenience wins, and then the specification and the analysis have to do all the work the eye would have done.
