Indonesian coconut milk and cream

Coconut milk is pressed from the grated kernel and it is an emulsion, so it separates unless something stops it. Fat content sets the grade and the price, stabilisers decide your label, and the difference between plants is whether they can hold a viscosity from one batch to the next.

How it leaves the country.

Coconut milk
The standard grade for cooking and manufacturing, sold on fat content. The volume export.
Coconut cream
Higher fat, thicker, used where richness is the point. A different specification and a different price.
Powder
Spray dried with a carrier. Ships and stores without a cold chain and it behaves differently in a recipe.
Concentrate
Water removed for shipping and added back at destination. Cheapest per litre of finished product and furthest from fresh.

How it is graded.

No international grade table. This is contracted against a written specification, and the five points below are what a food manufacturer actually writes into it.

Fat content
The line that sets the grade and most of the price. Milk and cream are the same product at different fat levels, and the number belongs in the contract rather than the word.
Stabilisers and emulsifiers
An emulsion separates without them. Whether you want them, and which, is a labelling decision in your own market before it is a technical one.
Viscosity, batch to batch
What separates a good plant from an adequate one. A manufacturer dosing into a recipe notices variation a consumer never would.
Aseptic or retort
Two different heat processes producing two different products in taste and in shelf life. Say which you want, because they are not substitutes.
Colour and off-notes
Comes from the freshness of the kernel and the time between grating and pressing. It is a plant location question rather than a formulation one.

Filled and labelled in Indonesia for private label buyers, which moves registration and labelling to your market.
Frozen
Closest to fresh and it needs a reefer the whole way, with the temperature trace that comes with it.

HACCP plan
A heat-processed food, so the documented system and its records are what a buyer and an auditor ask for first.1
Health certificate
Where the destination requires one for processed food, issued against its requirements.
Halal certification
Commercially decisive in several markets, and it attaches to the plant rather than to the coconut.
Certificate of origin
Which form applies depends on the destination and the preference scheme in force with Indonesia.

Questions buyers ask.

What is the difference between milk and cream?

Fat content, and nothing else structurally. They are the same pressing at different concentrations, which is why the contract should name a number rather than a word. Buyers who order cream and receive milk usually ordered a word.

Do I have to accept stabilisers?

No, and without them the product separates in the can, which is normal and which your customers may not expect. Whether that is acceptable is a decision about your market and your label rather than a technical necessity. Say which you want at specification stage.

Why does viscosity drift between shipments?

Kernel maturity, the time between grating and pressing, and how tightly the plant controls its process. A manufacturer dosing into a recipe notices it immediately. Contracting a viscosity range and testing each lot is the practical answer.
