Can or retort pouch.
Both reach shelf stability by heating the sealed pack. A pouch is thinner, so it heats through faster and the product is cooked less. A can is more robust in transit and on shelf. The choice changes the product, the line and the freight cost.

Which to choose.
- The product is delicate
- Pouch. Coconut milk, sauces and young jackfruit all show the difference.
- You are entering a category with an existing shelf
- Whatever that shelf uses. A format change is a marketing decision as much as a technical one.
- The route is long and freight matters
- Pouch, once you have solved the carton.
- The supplier says either is fine
- Ask which retort validation they hold for the format you want, and for which fill weight.
Questions buyers ask.
Is a pouch less safe than a can?
No, when it is validated and handled properly. Both are commercially sterile after a correct retort process, and both depend entirely on the integrity of the seal or seam.
Which has the longer shelf life?
In practice they are comparable, and what shortens either is damage rather than time. A dented can and a scuffed pouch are the same problem in different materials.
Can one supplier do both?
Some can. Many have only one line and will say yes to the other and subcontract it, which is worth knowing before you audit the wrong factory.
