Indonesian turmeric

Turmeric is sold as dried rhizome, ground powder and oleoresin. Buyers price it on curcumin content, which is what the colour and the functional value come from. Colour on its own is a poor guide, because it is the easiest thing to fake.

How it leaves the country.

Dried rhizome
Whole fingers and bulbs, the form that can still be inspected by eye.
Ground
Powdered, where adulteration is easier and analysis becomes the only check.
Oleoresin
Solvent-extracted and standardised on curcumin, sold into food and supplement manufacture.

How it is graded.

Contract on curcumin content with the analysis method named, plus the contaminant tests your market requires. Grade names and colour descriptions do very little here.

Curcumin is the number
It sets the price and the functional value. Ask for the figure on the shipped lot and for the method used to get it.
Adulteration is a live problem
Colouring agents have been found in ground turmeric worldwide, and lead compounds among them. Testing is not optional on ground material.
Microbiology
Whole spices carry a microbiological risk European buyers manage upstream, and steam treatment is the usual answer.1

Jute or polypropylene with a liner. Turmeric stains everything it touches, which matters for a shared container.
Storage
Moisture and light both degrade curcumin. How the lot was held between drying and loading is worth asking about.

Issued by Badan Karantina Indonesia against the destination's plant health requirements.2

Where the lot is steam-treated, the record travels with it.
Certificate of origin
Which form applies depends on the destination and on the preference scheme in force.

Questions buyers ask.

Why not just buy on colour?

Because colour is the easiest property to fake and the hardest to argue about afterwards. Curcumin content is measurable and contractible; a bright powder proves nothing on its own.

Whole or ground?

Whole where you can grind, because it can be inspected and it is far harder to adulterate. Ground saves you a step and moves the entire quality question onto the laboratory.

Is Indonesian turmeric high in curcumin?

It varies by variety and growing region as it does everywhere, and the spread within Indonesia is wider than any origin generalisation. Buy on the figure for the lot rather than on the country.
