Indonesian cardamom
Indonesian cardamom is Amomum compactum, known as Java or round cardamom, and it is a different species from the Elettaria green cardamom that dominates world trade. Round, paler and camphoraceous rather than sweet, it goes to traditional medicine, local cuisine and extraction.
How it leaves the country.
- Whole dried pods
- The traded form, sold on size, colour and dryness. Round rather than the elongated shape of green cardamom.
- Seeds
- Shelled, for extraction and for buyers who mill. More concentrated and easier to adulterate.
- Ground
- For food manufacturing, and the form where species substitution is invisible.
- Oil and oleoresin
- Extracted for flavour and traditional medicine use. A separate product with its own specification.
How it is graded.
A trade convention rather than a standard. The species question comes first and the physical grading second.
- Amomum compactum, not Elettaria
- The single most important fact about this product. A recipe built on green cardamom will not accept it, and a buyer ordering by the English word alone will receive it.
- Camphoraceous rather than sweet
- The aroma is genuinely different, closer to eucalyptus than to the sweet resinous character of green cardamom. That is why the uses differ.
- Size and colour
- Larger paler pods command a premium in the trade. It is an appearance grade rather than a compositional one.
- Moisture and mould
- Dried pods in a humid climate. The recurring rejection reason across Indonesian dried spice applies here too.
- Volatile oil
- What extraction buyers contract on, and it falls with age and poor drying. The figure belongs on the shipped lot.
How it is packed.
- Sacks with a liner
- Light and bulky, and it takes up moisture. The liner is doing real work on a tropical routing.
- Volume rather than weight
- A container fills by space long before it reaches the weight limit.
- Insects
- Dried pods attract pests, and infestation found at arrival can condemn a consignment. Treatment belongs in the specification.
Where it grows.
West Java
Java
The main producing area, grown under shade in highland smallholdings.
Central Java
Java
Growing and drying with good access to the north coast ports.
Lampung
Sumatra
Producing areas feeding the same collectors and exporters as the pepper trade.
Documentation, where applicable.
- Certificate of analysis
- Species where it matters, moisture, volatile oil, microbiology and the mould toxin panel your market applies.
- Phytosanitary certificate
- A plant product, issued against the destination's plant health requirements.1
- Fumigation certificate
- Required by several destinations for dried plant material in bulk.
- Certificate of origin
- Which form applies depends on the destination and the preference scheme in force with Indonesia.
Questions buyers ask.
Is this the cardamom I know?
Almost certainly not. The green cardamom of Indian and Middle Eastern cooking is Elettaria cardamomum from South India, Sri Lanka and Guatemala. Java cardamom is Amomum compactum and it tastes camphoraceous rather than sweet. Ordering by the English word alone is how buyers receive the wrong species.
What is it actually used for?
Traditional medicine across Southeast Asia, local cuisine, and extraction for flavour and fragrance. It is a real trade with real buyers, and those buyers know exactly which species they are ordering.
Can I buy Elettaria cardamom from Indonesia?
In small quantities and it is not what the country produces at scale. If you need green cardamom, India, Guatemala and Sri Lanka are the serious origins. Buying it through an Indonesian exporter means buying it from somewhere else with a margin attached.
What does your service cost?
Five per cent of the order value, paid by you and never by the factory. A factory audit starts at $250 depending on location. We work with orders from $10,000 per shipment.
Tell us what you need.
Give us the specification and the destination port. We come back with producer options and an indicative price. Our fee is 5 % of the order value, paid by you and never by the factory.
