Indonesian vanilla beans

Indonesia is one of the largest vanilla origins, growing both planifolia and tahitensis. What separates a good lot from a poor one happens before curing: beans picked too early never develop the vanillin, and no curing recovers it. That is the single thing worth checking on this product.

How it leaves the country.

Gourmet beans
Whole, pliable, unsplit beans sold on appearance and aroma as much as on analysis. The premium trade.
Extraction beans
Split or shorter beans destined for extract. Lower price, and the vanillin figure matters more here than the look does.
Species
Planifolia is the familiar one. Tahitensis has a different aroma profile and its own buyers, so name which you want.

How it is graded.

Grade A and Grade B are trade conventions rather than a published standard, and different exporters draw the line in different places. Contract on length, moisture, vanillin and split tolerance, and the letter becomes shorthand.

The real risk
Premature harvest. Theft pressure pushes growers to pick early, and a bean picked before maturity never builds vanillin no matter how well it is cured.1
Curing
Traditional curing runs for months of sweating and drying. It develops what is in the bean and cannot add what is missing.1
What to specify
Species, grade, bean length, moisture, vanillin content on the shipped lot, and how many splits you will accept.

How it is packed.

Presentation
Bundled and vacuum-packed in foil, then boxed. Vacuum packing preserves the bean and also hides how pliable it really is.
Storage
Vanilla goes mouldy in the wrong conditions and dries out in others. Ask how the lot was held between curing and shipping.

Names the trade contracts on, most of them on the Indonesian register of geographical indications.

Certificate of analysis
Vanillin content and moisture on the lot that shipped. On a product priced by vanillin, this is the document that matters most.
Phytosanitary certificate
Issued by Badan Karantina Indonesia against the plant health requirements of the destination.2
Certificate of origin
Which form applies depends on the destination and on the preference scheme in force between it and Indonesia.

Questions buyers ask.

Why is Indonesian vanilla cheaper than Madagascan?

Partly reputation and partly a real quality spread. The good lots stand comparison; the poor ones were picked early and cured to hide it. The discount reflects the buyer's risk of getting the second kind, which is exactly the risk worth paying someone to remove.

How do I check for premature harvest?

Vanillin content on the shipped lot, from an independent laboratory. Appearance and aroma can be improved by curing and by vacuum packing, and the analysis cannot.

Grade A or Grade B?

Depends on what you are making. Gourmet beans for whole-bean sale and for pastry, extraction beans for extract where the look does not travel to the customer. Paying gourmet prices for beans destined for a vat is a common and avoidable mistake.
