Konjac and porang

Porang is the Indonesian name for Amorphophallus tubers grown for their glucomannan content. The raw tuber contains calcium oxalate crystals that irritate skin and mouth, so processing is a purification rather than only a drying step, and the finished flour is bought on viscosity.

How it leaves the country.

Dried chips
Sliced and dried tuber. The intermediate that most Indonesian production has historically exported, for milling elsewhere.
Konjac flour
Milled chips. Contains the glucomannan plus the starch and other tuber components, and it is the cheaper grade.
Purified glucomannan powder
Refined to remove starch and residual oxalate. Higher viscosity, higher price, and the grade most food and supplement buyers actually want.
Finished products
Konjac noodles, jelly and sponges made in Indonesia. A different purchase with its own food safety and labelling questions.

How it is graded.

Bought on how thick a solution it makes and how clean it is. Two powders that look identical can be entirely different products.

Viscosity
The primary specification, measured under stated conditions. It is what the buyer is paying for and it varies with the raw material and with how carefully the flour was refined.
Glucomannan content
The active fraction. Purified grades declare it and unpurified flour carries a good deal of starch alongside it.
Residual oxalate
The reason purification exists. Raw tuber irritates, and how thoroughly it was removed is a safety specification rather than a quality preference.
Particle size
Affects how it hydrates and how it behaves in a line. Specified as a mesh or a distribution.
Colour and odour
Pale cream, with a faint smell. Darkening and a strong odour point at poor drying or old chips.
Sulphur treatment
Some processing uses sulphur to keep the chips pale. Residues are restricted in many markets and it has to be declared, so ask directly.

How it is packed.

Lined bags in cartons
Food grade liners, sealed. The powder is hygroscopic and takes up water readily.
Moisture
Absorbed water causes caking and it changes the hydration behaviour, which is the property you bought.
Dust
Fine, light and it gets everywhere. Handling and warehouse practice at destination is a real consideration.
Ambient
Shelf stable dry, in a dry container away from heat.

HACCP certificate
The purification step is the food safety control, so the audit is about the process rather than only about hygiene.1

For dried chips and unprocessed material, where the destination requires it.2

Which form applies depends on the destination and the preference scheme in force with Indonesia.

Questions buyers ask.

What is the difference between porang and konjac?

Porang is the Indonesian name for the crop and the tubers, and konjac is the name the finished ingredient is traded under internationally. Different Amorphophallus species are used in different countries, so the species belongs in the specification.

Why does viscosity matter so much?

Because it is what the ingredient does. A formulator dosing for a target texture is dosing against viscosity, so a lot that measures differently changes their product even if the label is the same.

Is the raw tuber dangerous?

It contains calcium oxalate crystals that irritate skin and mouth, which is why it is purified rather than simply dried. Buying unpurified material for food use is a decision to take with your own technical people.

Should I buy chips or finished flour?

Chips are cheaper and you take on the milling and purification. Flour and purified powder cost more and arrive ready. Which is right depends entirely on whether you have the processing capability.
