Indonesian carrageenan

Carrageenan is extracted from red seaweed and used as a gelling and stabilising agent across food, pet food and personal care. Indonesia farms the raw seaweed at very large scale and processes some of it, and the commercial split that matters is refined against semi-refined.

How it leaves the country.

Semi-refined carrageenan
Processed with alkali and washed rather than fully extracted, so cellulose remains. Cheaper, cloudier in solution, and entirely suitable for many applications.1
Refined carrageenan
Fully extracted and precipitated, leaving a clear solution. The higher-value product and the one most food applications specify.
Kappa, iota and lambda
Three types with different gelling behaviour, coming from different seaweed species. They are not substitutes and the type belongs on the order.
Blends
Standardised with sugars or salts to a target gel strength. Convenient, and it changes your ingredient declaration.

How it is graded.

This is bought as a functional ingredient, so the specification is about behaviour rather than appearance. A formulator writes the five points below.

Type decides the gel
Kappa makes a firm brittle gel, iota an elastic one, lambda thickens without gelling. Ordering carrageenan without a type is ordering a category.
Gel strength and viscosity
Measured under stated conditions, and the conditions matter as much as the number. Two laboratories using different methods produce different figures legitimately.
Refined or semi-refined
Clarity in solution is the visible difference. Applications where the product is transparent need refined, and many dairy and meat applications do not.
Microbiology and heavy metals
A food additive, so the panel your market applies belongs on the certificate for the shipped lot.
Seaweed species and origin
Eucheuma cottonii and spinosum are the Indonesian farmed species and they yield different types. The raw material decides what the extract can be.1

How it is packed.

Multi-wall bags with a liner
Powder that takes up moisture readily. The liner is doing real work on a tropical routing.
Weight rather than volume
Dense powder, so a container reaches its weight limit with space to spare.
Humidity in transit
A caked lot is difficult to dose and sometimes unusable. Stowage and desiccant belong in the specification.

Where the destination requires one for a food ingredient, issued against its requirements.
Certificate of origin
Which form applies depends on the destination and the preference scheme in force with Indonesia.

Questions buyers ask.

Semi-refined or refined?

Refined where the finished product has to be clear, and semi-refined where it does not, which covers a great many dairy, meat and pet food applications. The price gap is real and paying for clarity you do not need is the common error.

Why does my gel strength differ from the last lot?

Seaweed varies with the farm, the season and the drying, and the extraction evens that out only partly. Contracting a range rather than a number, and testing each lot under a stated method, is how manufacturers manage it.

Can I buy the raw seaweed instead?

Yes, and Indonesia exports a great deal of it. That makes you the processor, with the extraction equipment and the effluent handling that implies. Most buyers who ask this question actually want the extract.
