Dried seaweed is a raw material sold by the tonne to processors. Carrageenan is the extracted functional ingredient sold by specification to formulators. Buyers occasionally order the first when they wanted the second, which means they have bought a processing project.

Questions buyers ask.

Can I extract carrageenan myself?

It is an industrial process with alkali treatment, washing, precipitation and effluent handling, so it is a plant rather than a step. Buyers who ask this question almost always want to buy the extract.

Why is dried seaweed priced so variably?

Moisture and salt, mostly. A wet salty lot is a smaller quantity of useful material and freight paid on water. That is why the specification names moisture and impurity limits rather than just a tonnage.

Which type of carrageenan do I need?

Kappa for a firm brittle gel, iota for an elastic one, lambda to thicken without gelling. It follows from the application rather than from a preference, and ordering carrageenan without a type is ordering a category.
