Canned pineapple

Indonesia is one of the largest suppliers of canned pineapple in the world, and almost all of it comes from Lampung in southern Sumatra. The plantations and the canneries are integrated, which is unusual for Indonesian food exports and it shows in the consistency.

How it leaves the country.

Slices
Whole rings in a can. The most demanding cut, because the fruit has to be large and uniform enough to yield full rings.
Chunks, tidbits and pieces
Progressively smaller cuts using fruit and offcuts that will not yield rings. Where most volume sits.
Crushed
For bakery, dairy and manufacturing use, sold by drained weight and brix rather than by appearance.
Juice and concentrate
A parallel stream from the same fruit, which is why an integrated site can absorb variation that a standalone cannery could not.

How it is graded.

Bought on cut, on pack medium and on two numbers. The rest of the specification follows from the destination and the application.

Pack medium
Heavy syrup, light syrup, juice or water. It decides sweetness, cost and how the product is labelled, and it is the first thing to fix.
Brix
The sugar concentration of the finished pack. Agree it as a range on the finished product rather than accepting a house standard.
Drained weight
The fruit you actually receive against the declared net weight. This is where the money is, and an unspecified order drifts.
Cut uniformity
Slices are judged on completeness and thickness, chunks on size range. Broken rings in a slice pack is the most common downgrade.
Colour
Even pale gold. Browning or translucent patches point at over-ripe fruit or a slow line between cutting and filling.
Can integrity
Seam measurement and record keeping. On a low-acid to acid food in a can, the seam is the safety-critical control.

How it is packed.

Catering cans
Large format for food service and manufacturing. Cheap per kilo and heavy, so the pallet pattern and the container payload matter.
Retail cans
Consumer sizes with your own label. Artwork and destination labelling requirements have to be settled before the run.
Aseptic drums
For juice and purée streams, filled aseptically and shipped ambient.
Ambient shipping
Shelf stable after processing, so a dry container. Weight rather than volume is the limit.

A thermally processed canned food, so the process schedule and seam control sit at the centre of the audit.1
Certificate of analysis
Brix, drained weight, pH and microbiological result on the shipped lot.
Certificate of origin
Which form applies depends on the destination and the preference scheme in force with Indonesia.
Halal certificate
Standard for Indonesian food exports and required for several destination markets.2

Questions buyers ask.

Why is Indonesian canned pineapple so consistent?

Because the plantation and the cannery are usually the same operation, so fruit arrives at a known maturity within hours of picking. Most Indonesian food categories are assembled from many smallholders, and this one is not.

Syrup or juice pack?

Juice packs cost more and label better in markets where added sugar is a selling point against you. Syrup is cheaper and standard in food service. It is a marketing decision with a cost attached rather than a quality one.

Can I get private label?

Yes, and it is a normal part of this trade. Settle the artwork against your destination's labelling rules before production, because a canned run with the wrong declaration is expensive to fix.
