Indonesian tilapia
Tilapia is farmed in Javanese and Sumatran ponds and cages and exported mostly as frozen fillets. Being farmed, it sits outside the catch certificate regime. What replaces that as the deciding question is residues, which are settled at the farm rather than at the plant.
How it leaves the country.
- Fillets
- Skin-on or skin-off, deep skinned or not, and portioned or whole. The main export form.
- Whole gutted
- Cheaper per kilo and the filleting work moves to your side. The yield calculation is what decides which is better.
- Fresh and frozen
- Fresh means airfreight and a short window. Frozen is a reefer and a different cost structure.
How it is graded.
There is no national grade table. A tilapia contract is a fillet size band, a trim specification, a glazing percentage and a residue standard, and the last one is what stops containers.
- Red against black
- Red tilapia sells at a premium in Asian markets where it is presented whole, and black tilapia dominates the fillet trade. They are farmed differently and priced differently, and the strain belongs in the order.
- Strain matters to the farm
- Improved strains developed for growth rate dominate commercial farming. It is a farm decision rather than a buyer one, and it explains why size uniformity varies so much between suppliers.
- Off-flavour and purging
- Compounds produced by organisms in pond water are taken up by the fish and produce a muddy taste. Purging in clean water before harvest is the fix, and whether a farm does it is the single most useful question on this species.
- What to specify
- Size band, trim level, skin on or off, glazing percentage, freezing method, and the residue and microbiological standards of your market.
- Residues
- What went into the pond is what a destination laboratory looks for. It is a farm question and it is settled long before the fish reaches a plant.
- The plant's system
- HACCP running at the approved establishment is what the export health certificate rests on.1
How it is packed.
- Cold chain
- Held at a temperature named in the contract from the plant onward. On whitefish a broken chain shows in texture and drip loss.
- Glazing
- The ice layer forms part of the shipped weight, so the percentage is part of the price and belongs in writing.

Questions buyers ask.
Does farmed tilapia need a catch certificate?
No. The European catch certificate regime addresses illegal fishing and applies to wild-caught product. Health certification and the approved establishment requirement apply just the same.
What actually gets tilapia rejected?
Residues, more often than anything else, followed by texture problems from a broken cold chain. Both trace upstream of the container, which is why the useful checks happen at the farm and the plant.
How does Indonesian tilapia compare with other origins?
It competes on freight to some markets and on price in others, and the quality spread within Indonesia is wider than the spread between countries. Judge the farm and the plant rather than the flag.
