Nata de coco

Nata de coco is bacterial cellulose. Coconut water is fermented with Komagataeibacter bacteria, which build a firm mat of cellulose at the surface. That mat is cut into cubes and packed in syrup. Because it is grown rather than cooked, what goes into the fermentation is a food safety specification.

How it leaves the country.

Cubes in syrup
The trade. Cut to a size, packed in sugar syrup, pasteurised or retorted for shelf stability.
Bulk in drums
For drink and dessert manufacturers who dose it into their own formulation. The syrup is a carrier rather than a product.
Retail cups and pouches
Sold as a dessert or a drink inclusion. A finished-goods trade with labelling and pack requirements attached.
Unsweetened
For manufacturers who add their own sugar system. Less common and worth asking for if you formulate.

How it is graded.

Two things separate a good lot from a cheap one: what the fermentation was fed, and how the mat was cut. Neither is visible in a photograph of cubes in syrup.

Nitrogen source
The fermentation needs a nitrogen source. It has to be food grade, and confirming which material a plant buys and holding the specification for it is the single most important check on this product.
Texture
Firm and chewy without being rubbery. Texture comes from how long the mat grew and how it was handled, and it is the property the buyer is actually paying for.
Cube size and uniformity
Specified in millimetres. Ragged cubes signal hand cutting under time pressure and they behave badly in a filling line.
Colour and clarity
Translucent to white. Yellowing suggests over-processing or an old syrup, and the syrup should be clear rather than cloudy.
Syrup strength
Decides sweetness and shelf behaviour. If you are formulating, agree it as a number rather than accepting a house standard.
Drained weight
The ratio of gel to syrup. It is where the cost sits and where an unspecified order quietly gets worse over time.

How it is packed.

Drums or pails
Food grade, with the syrup as the packing medium, for industrial buyers.
Cans and pouches
Retail formats, thermally processed. The food contact declaration for the lining or laminate belongs in the document pack.
Ambient
Shelf stable after processing, so a dry container rather than a reefer, which keeps the freight sensible.
Weight
Mostly water and syrup, so a container reaches its weight limit before it fills. Plan the loading around the payload rather than the cubic.

Halal certificate
Standard for Indonesian food exports and required for several destination markets.2

Which form applies depends on the destination and the preference scheme in force with Indonesia.

Questions buyers ask.

Is nata de coco a coconut product?

It is grown on coconut water, and the material itself is cellulose produced by bacteria rather than anything extracted from the nut. That distinction matters for labelling, for allergen statements and for how you describe it to your own customers.

What should I check at the factory?

The fermentation inputs and where they were bought, the cleanliness of the growing trays, and the water. Small plants can produce excellent product and they can also be the weakest link in a food safety chain, so this is a category to audit rather than to trust.

How is it different from tapioca pearls?

Completely. Pearls are cooked starch that must be used within hours of cooking. Nata is a shelf-stable gel that arrives ready. Both end up in the same drinks, which is why buyers confuse them.
