Indonesian honey

Indonesia produces wild forest honey harvested from Apis dorsata colonies in tall trees, and stingless bee honey from Tetragonula species kept in small hives. They are chemically different. Stingless bee honey does not meet the moisture and acidity limits written for honeybee honey, which is a species fact rather than a quality failure.

How it leaves the country.

Wild forest honey
Harvested from Apis dorsata combs in forest trees, notably the sialang trees of Sumatra and forest areas of Kalimantan and Sumbawa. Harvest is by climbing, at night, by people who have the right to those trees.
Stingless bee honey
Kelulut or klanceng, from Tetragonula and related genera. Stored in small resin pots rather than wax comb, and harvested by suction or by cutting pots.
Apiary honey
Managed Apis mellifera and Apis cerana hives, often moved to follow flowering. The closest thing to conventional honey production.
Bulk drums or retail
Drums for blenders and reprocessors, glass or squeeze packs for retail. The retail trade is where the origin story carries value.

How it is graded.

Honey is graded on chemistry and on what is not in it. Two axes decide most Indonesian offers: whether the moisture is low enough to be stable, and whether the sugar in the jar came from flowers.

Moisture
The single most important number. Tropical forest honey is frequently harvested wetter than temperate honey, and honey above its stability point ferments in the drum. Ask for the figure on the lot rather than a typical value.
Fermentation
Wet honey ferments, gasses and pushes the lid. It is the classic problem with unprocessed tropical honey and it appears after shipping rather than before.
Species
Stingless bee honey is naturally wetter and more acidic than honeybee honey, so the standard everybody cites does not describe it. Selling it as honey without saying which bee is where labelling disputes start.
Adulteration testing
Honey is among the most adulterated foods traded. Carbon isotope testing catches cane and maize syrup, and more sophisticated profiling is used against rice and beet syrup. Serious buyers test every lot.
HMF and diastase
Both indicate heating and age. Honey that was warmed to make it flow or to stop it crystallising shows here, which is why the drum filling temperature is a specification point.
Residues
Managed apiary honey can carry veterinary residues. Wild forest honey usually cannot, and instead carries the question of what was sprayed near the forest.

How it is packed.

Food grade drums or pails
Lined steel drums or HDPE pails for bulk. Honey is heavy and dense, so a container weighs out long before it fills up.
Temperature in transit
Honey crystallises and ferments at different temperatures, and a dry container crossing the tropics gets hot. Where the risk is real, buyers ship in a reefer set to a holding temperature.
Retail glass
Heavy and breakable, so the carton and the pallet pattern matter more than for most food products.
Headspace
Leave it. Fermenting honey needs somewhere to go, and a completely full drum deforms.

Health certificate
Honey is an animal product for import purposes in several regimes, which puts it in a stricter category than a plant food.1
Certificate of analysis
Moisture, HMF, diastase and an authenticity test on the shipped lot rather than on a reference sample.
Certificate of origin
Which form applies depends on the destination and the preference scheme in force with Indonesia.
Organic certificate
Possible for forest honey where the foraging area qualifies, and it is a harder certification than it sounds because bees do not respect boundaries.2

Questions buyers ask.

Is stingless bee honey real honey?

It is honey in the ordinary sense and it is made by a different insect, so it sits outside the compositional standard written for honeybee honey. Whether you may call it honey on a label depends on your market, and it is a question worth settling before you order rather than after.

Why does tropical honey ferment?

Because it was harvested or stored above the moisture level at which yeasts stay dormant. It is a handling issue at the point of harvest, and no amount of care afterwards fixes a wet lot.

Can I get honey certified as wild or forest?

You can get honey from named forest harvester groups with a documented chain, and that is worth having. A claim on a jar has to be defensible in your own market, so agree the wording against the evidence you actually hold.

How do I know it is not syrup?

Test it, on the shipped lot, at a laboratory you chose. This is the one product category where a certificate supplied by the seller is not a substitute for your own test.
