Frozen durian

Durian is exported frozen because fresh fruit needs market access agreements and a very short chain. Frozen product travels, keeps and is what most overseas demand actually buys. Variety and form decide the price, and the odour decides the logistics.

How it leaves the country.

Whole fruit, frozen
The premium presentation, frozen with the husk on. Bulky, heavy and mostly inedible weight, so the freight per kilo of flesh is high.
Deshelled pods
Flesh with the seed, frozen in trays or bags. The commonest export form and the best balance of cost and presentation.
Pulp and paste
Seed removed, for manufacturing into desserts, drinks and fillings. Sold by brix and solids rather than by appearance.
Freeze dried
A different product entirely, shelf stable and expensive, for snacks and inclusions.

How it is graded.

Bought on variety and on ripeness at freezing. Both are decided in the hours before the freezer and neither can be fixed afterwards.

Variety
Musang King, Monthong, Montong and local Indonesian varieties differ enormously in flavour, texture and price. Name it in the contract.
Ripeness at freezing
Frozen underripe, it never develops flavour. Frozen overripe, the texture collapses on thawing. The window is short and it is the whole quality question.
Freezing method
Blast or cryogenic. Faster freezing gives smaller ice crystals and better texture after thawing, and it costs more.
Flesh to seed ratio
What you actually receive. It varies by variety and it belongs in the specification for pod and pulp forms.
Colour
Pale yellow to deep gold by variety. Browning indicates oxidation before freezing or temperature abuse afterwards.
Temperature history
A partial thaw and refreeze is visible in the texture and it is why the container recorder matters.

How it is packed.

Vacuum or barrier packed
The odour is powerful and it transfers. Sealed packaging protects both the product and everything near it.
Reefer with a recorder
Frozen throughout, with a temperature trace that becomes part of the goods. A break shows and it decides any claim.
Odour management
Many airlines and some facilities restrict durian outright. Establish this with your forwarder before planning the route.
Cold chain at destination
The chain has to stay unbroken to the customer. A thawed and refrozen product is a different product.

A plant product, and frozen product usually faces an easier position than fresh fruit.1
Certificate of analysis
Microbiological results and, for pulp, brix and solids on the shipped lot.
HACCP certificate
Freezing and cold chain control are the points that matter in the audit.2
Halal certificate
Standard for Indonesian food exports and required for several destination markets.3

Why frozen rather than fresh?

Fresh fruit needs a market access agreement with your country and a very short chain. Frozen travels, keeps and faces a simpler position, which is why the overseas trade is almost entirely frozen.

Which variety should I buy?

It depends on your customer. The famous varieties command a premium and Indonesian local varieties can be excellent and cheaper. Taste before committing, because the differences are large.

Is the smell a real logistics problem?

Yes. Some carriers and facilities restrict durian, and the odour transfers to other cargo. Raise it with your forwarder at the planning stage rather than at the booking.
