Indonesian edible bird's nest

Indonesia produces most of the world's edible bird's nest, harvested from swiftlet houses across Java, Sumatra and Kalimantan. The commercial question is not supply. It is registration: China is the dominant market, and only establishments registered with Chinese customs may ship there.

How it leaves the country.

Raw unclean nest
As harvested, with feathers and debris still in it. Traded domestically and into processing, and not the form that moves under an export protocol.
Cleaned nest
Hand cleaned, dried and shaped. This is the export product, and cleaning is where most of the labour and most of the value sits.
Cup, strip and fragment
Grading by how intact the nest is after cleaning. A whole cup carries a large premium over the same weight in fragments.

How it is graded.

Two things decide a lot here. What the nest looks like after cleaning, and whether the processing establishment is registered for the destination. The second one is binary.

Establishment registration
Chinese import rules require overseas food manufacturers to be registered before their product may enter. For bird's nest this is the gate the whole trade passes through.1
The registration belongs to the plant
It attaches to the processing facility, so it cannot be borrowed. Shipping unregistered product under somebody else's number is fraud, and the traceability system exists to catch exactly that.1
Nitrite is tested
Nests naturally carry nitrite and the destination limits it. Processing is what brings a batch inside the limit, so it is a plant question rather than a farm one.
Quarantine classifies it as high risk
Indonesia's quarantine authority treats bird's nest for export as a high risk commodity with laboratory testing before it leaves.2
Bleaching is a red flag
Whiter is not better. Chemical whitening and adulteration with other material are the recurring integrity problems in this trade, and both are detectable.

How it is packed.

Boxed by piece
Packed in trays or boxes by count and weight, because whole cups are fragile and their integrity is the value.
Dry and stable
Moisture content is controlled at drying and has to stay controlled in transit. A rehydrated nest grows mould and is worth nothing.
Traceability marking
Registered product carries marks tying the carton back to the establishment and the batch, which is what allows a consignment to be checked at the border.1

GACC facility registration
The precondition for shipping to China. Verify the establishment number against the published list rather than accepting a certificate scan.1
Certificate of analysis
Nitrite, moisture and microbiology on the shipped batch, plus whatever else the destination protocol names.
Health certificate
Issued by the Indonesian competent authority against the destination's requirements for the product.2

Which form applies depends on the destination and the preference scheme in force with Indonesia.

Questions buyers ask.

Can any Indonesian supplier export bird's nest to China?

No, and this is the first thing to check. Chinese rules admit product only from registered overseas establishments, and the registration belongs to the processing facility. A trader without one cannot ship, whatever they say about their connections. Ask for the establishment number and check it against the published list yourself.

What actually gets consignments rejected?

Chemical results, most often. Nitrite and residues from cleaning are the recurring failures, and both are decided in the processing plant rather than in the swiftlet house. That is why an audit of the cleaning operation tells you more here than an audit of the source.

Why is whiter nest not better?

Because the colour can be produced with bleach. Natural cleaned nest varies in tone, and a uniformly bright white batch invites the question of how it got that way. Buyers who select on appearance alone are selecting for the thing the trade's worst actors are best at.
