Indonesian coconut flour

Coconut flour is the defatted meal left after oil extraction, dried and milled. It absorbs several times its weight in liquid, which means it cannot be substituted one for one for wheat flour, and the extraction route behind it decides the flavour and the residual fat.

How it leaves the country.

Standard flour
Milled to a general baking mesh, the volume product for gluten-free and high-fibre use.
Fine mesh
Milled finer for a smoother crumb, at a higher price and with different handling.
Organic
Certified against the destination's organic regulation, which is a separate chain from the start rather than a label.
Desiccated coconut
A different product from the same nut, dried and shredded rather than defatted and milled. Buyers confuse the two.

How it is graded.

Contracted against a specification rather than graded. Four properties decide whether it works in a recipe and one of them decides how it tastes.

Absorption
The defining property. Coconut flour takes up several times its weight in liquid, so a formulation has to be built around it rather than adapted.
Residual fat
What the extraction left behind. It changes shelf life, because fat goes rancid, and it changes mouthfeel.
Particle size
Decides crumb and dispersion. A specification names a mesh range rather than the word fine.
The oil route behind it
Meal from virgin oil pressing tastes of coconut. Meal from copra crushing does not taste the same and may carry the copra chain's problems with it.
Microbiology and mould toxins
A dried milled food from a tropical process. The panel your market applies belongs on the shipped lot.

Flour takes up moisture and it cakes. The liner is doing real work on any tropical routing.
Volume rather than weight
Light, so a container fills by space with weight to spare.
Rancidity
Residual fat oxidises. Barrier packaging and stowage away from heat matter on long routes.

Questions buyers ask.

Can I substitute it for wheat flour?

Not one for one. It absorbs several times more liquid, so a recipe has to be built around it rather than adapted. Buyers who treat it as a swap produce something inedible and blame the flour.

Why does the flavour differ between suppliers?

The extraction route. Meal from virgin oil pressing carries coconut character, and meal from copra crushing does not taste the same. Ask which route the meal came from, because nobody volunteers it.

Is it the same as desiccated coconut?

No. Desiccated is dried shredded kernel with the fat still in it. Coconut flour is defatted meal milled fine. They behave completely differently in a recipe and they are frequently confused on order forms.
