Muntok white pepper
Muntok is the white pepper of Bangka, named after the port it left from, and it is registered as a geographical indication. White pepper is made by retting ripe berries in water until the skin can be rubbed off, and that soaking step is what defines both the product and its main risk.

What makes it different.
- Retting is the whole process
- Ripe berries are steeped in water for days until the outer skin breaks down, then rubbed clean and dried. Black pepper skips this entirely, which is why the two taste and behave so differently.
- The water is the risk
- Retting in stagnant or river water introduces a microbiological load that has to be dealt with afterwards. This is the origin's known weak point and the reason steam treatment is so often specified.
- An island origin with a boundary
- Bangka is a defined island, so the registered area is unusually easy to verify by comparison with a mainland region.
- Sold on colour as well as clean count
- White pepper is graded partly on how uniformly pale it is, which depends on how completely the skin was removed and how it was dried.

Why is Muntok white pepper more expensive than black?
Because it takes more work and loses more weight. Retting and skin removal are labour, they take days, and what leaves is lighter than what went in. You are paying for the process rather than for a better berry.
Is the microbiological concern real?
It is real enough that European food buyers plan around it. Retting means days in water, and what is in that water ends up on the product. Steam treatment is the usual answer and it belongs in the specification, along with a certificate of analysis on the shipped lot.
Does Muntok have to come from Bangka?
Under the registration, yes. In practice the name is also used loosely in the trade to mean Indonesian white pepper generally. If the origin matters for your labelling or your customers, buy on the registered name and ask for the evidence behind it.
