Palm sugar (gula aren)

Gula aren is made from the sap of the arenga palm, a forest tree rather than a plantation crop. It is darker and more aromatic than coconut sugar, and the two are traded under overlapping names, which is how buyers end up with the wrong one.

How it leaves the country.

Blocks and cylinders
The traditional form, poured into moulds made from bamboo or coconut shell. Hard, and it has to be broken or grated to use.
Granulated
Dried and milled to a free-flowing sugar. What most export buyers want, and it needs proper drying to stay free flowing.
Liquid or syrup
Concentrated sap. Requires preservation or a controlled water activity to be stable, so it is a more technical product than it looks.
Organic certified
Available from organised groups, and the certification covers the collection area and the processing rather than a plantation.

How it is graded.

Judged on species, colour, moisture and what else went into it. The last one is where the category has a real problem.

Species
Arenga pinnata for gula aren, coconut palm for coconut sugar. They taste different and price differently, and mixing them is the most common substitution in this trade.
Adulteration with cane sugar
Cane sugar is cheaper and blends invisibly. It is the reason serious buyers test rather than taste, and it is why a supplier relationship matters here.
Moisture
Palm sugar is hygroscopic. Under-dried granulated sugar cakes into a block in the bag, which is the most common arrival complaint.
Colour and flavour
Deep amber to dark brown, with a caramel and smoky character from the open-pan boiling. Paler product usually means a shorter boil or a blend.
Foreign matter
Sap is collected in containers in a forest. Filtration during boiling decides what ends up in the sugar.
Sulphite treatment
Some producers use additives during collection to delay fermentation of the sap. Ask, because it has to be declared and it is restricted in some markets.

How it is packed.

Moisture barrier
The product absorbs water from the air and cakes. Lined bags or barrier film, and it matters more in a container crossing the tropics than at the factory.
Bulk bags or cartons
Bulk for manufacturers, retail packs for brands. Granulated travels better than blocks, which chip and break.
Heat
Palm sugar softens and blocks fuse in a hot container. Stow away from the door and the walls.
Pest control
A sugar product in a warehouse in the tropics. Storage discipline before loading is part of the specification.

Certificate of analysis
Moisture, microbiological results and, where it matters, an authenticity test against cane sugar on the shipped lot.
HACCP certificate
A processed food, with the boiling and drying steps and the collection hygiene as the controls.1
Organic certificate
Where the collection area and the processing are certified, and the certifier has to be one your market accepts.2
Halal certificate
Standard for Indonesian food exports and required for several destination markets.3

Questions buyers ask.

Is gula aren the same as coconut sugar?

No. It comes from a different palm, tastes stronger and more aromatic, and usually costs more. The names are used loosely in the trade, so the species belongs in the specification rather than in the conversation.

How do I know it is not cut with cane sugar?

Testing on the shipped lot, at a laboratory you chose. Cane sugar is much cheaper and blends without any visible sign, which makes this one of the categories where your own test is worth its cost.

Why did my granulated sugar arrive as a solid block?

Moisture. Either it was under-dried or the packaging did not keep humidity out. Both are specification points and both are preventable.

Is it a sustainable product?

Arenga palms are frequently forest or mixed-garden trees that are tapped rather than felled, which is a genuine point in its favour. Any claim you print has to be evidenced by the actual supply chain rather than by the species.
