Indonesian fish maw
Fish maw is the dried swim bladder of a fish, and the trade runs almost entirely into China and the Chinese diaspora. Price varies by species by more than an order of magnitude, a dried bladder is very hard to identify by eye, and that combination is the whole commercial risk.
How it leaves the country.
- Whole dried
- Cleaned, split and sun or air dried in one piece. The premium form, sold by species, size and shape.
- Cut and pressed
- Trimmed and flattened for easier packing and grading. Handling changes appearance and it changes price.
- Fried and puffed
- Expanded for immediate culinary use. A different market at a much lower value than premium dried maw.
- Mixed grades
- Assorted material by weight. Cheap, and it is where substitution hides most easily.
How it is graded.
Grading is by species first and then by size, thickness and shape. There is no published standard, and the buyer's own knowledge is a large part of what protects them.
- Species decides the price
- The gap between a common species and a prized one is enormous, and dried bladders of different species can look similar to an untrained eye. This is the reason experienced buyers photograph and inspect rather than order by description.
- Registration for China
- Chinese rules admit food only from registered overseas establishments, so the processing facility has to hold registration before a single carton ships.1
- Check the listing before ordering
- Some fish are subject to international trade controls. Verify the exact species against the current listing rather than relying on the exporter.2
- Drying and mould
- Sun dried in a humid climate. Underdried maw grows mould in a container and the value is destroyed.
- Bleaching is a warning
- Unnaturally uniform pale colour invites the question of how it got there. As with bird's nest, appearance is what the worst actors are best at.
How it is packed.
- Boxed by grade and species
- Cartons with the species and grade marked, because that is what a receiving buyer checks against the invoice.
- Dry and stable
- Moisture is controlled at drying and it has to stay controlled. Sealed liners and desiccant on long routes.
- High value per carton
- Small volume and large value, so insurance and handling matter more than freight cost.

- GACC facility registration
- The precondition for shipping to China. Verify the establishment number on the published list rather than accepting a scan.1
- Health certificate
- Issued by the Indonesian competent authority against the destination's requirements for fishery products.
- Certificate of analysis
- Moisture and microbiology, plus anything the destination protocol adds.
- CITES permit
- Required where the species is listed. Check the species against the current listing before ordering.2
Questions buyers ask.
How do I know I got the species I paid for?
By inspecting rather than ordering by description, and by working with somebody who handles the product regularly. Dried bladders of different species can look alike and the price difference is enormous, which makes this the most substituted product on this site. Where the value justifies it, laboratory identification is available.
Can any Indonesian supplier ship to China?
No. Chinese import rules admit food only from registered overseas establishments, and the registration belongs to the processing facility. Ask for the number and check it yourself against the published list, because this is a trade with a lot of intermediaries.
Is this a sustainable product?
It depends entirely on the fishery and the species, and some of the species historically traded are under real pressure. Check the exact species against current international listings before you order, and treat a supplier who is vague about species as a supplier who is vague on purpose.
