Kubu Bali cashew
Kubu sits on the dry north-east coast of Bali under Mount Agung, where little else grows well and cashew does. The nut holds a registered geographical indication, and as with any cashew the decisive question is where and how it was shelled.

What makes it different.
- Dry volcanic ground
- The area is arid by Balinese standards and the soil is volcanic. Cashew tolerates both, which is why it became the crop here rather than a choice between crops.
- Smallholder groves
- Trees grown across small holdings rather than plantations, with collection through local traders before any processor sees the nut.
- Shelling decides the grade
- Whole kernels command the premium and breakage happens at shelling. A well-grown nut badly shelled becomes a low grade.
- A small registered origin
- Volumes are modest and the name is protected, which makes this a speciality and traceability play rather than a commodity one.

- A few hours across Bali to Denpasar, and many shipments consolidate through Surabaya for sailing frequency.

How does Kubu compare with Muna cashew?
Both are registered origins and both are smallholder crops. Muna is an island in Southeast Sulawesi with larger volumes, Kubu is a small dry corner of Bali with a name that carries in the speciality trade. On quality the processor matters more than either.
Is the nut shelled in Bali?
Sometimes, and Indonesian raw cashew also travels for shelling elsewhere. If the origin claim matters for your labelling, get the processing location in writing as well as the growing one, because they are not always the same country.
What is the main food safety question?
Mould toxins from drying and storage, plus microbiological contamination introduced at hand shelling. Both are processor questions, which is why an audit of the shelling operation tells you more than a visit to a grove.
