Questions buyers ask.

Does frozen mean lower quality?

Blast freezing at the plant preserves the condition it found. A well-handled fish frozen quickly beats a badly handled fish flown fresh, and buyers who equate fresh with better are measuring the wrong thing.

What is the biggest fresh risk?

The connection. A long transit stop on a hot apron ruins a consignment that was perfect at loading, and the airline routing is therefore part of the specification.

Can I do both?

Many buyers do, with fresh for a premium line and frozen for volume. They are separate supply chains from the same port and often from the same plant.
