Artisanal or industrial salt.

Balinese hand-harvested salt is a premium food product made in small quantity by a slow process. Madura solar salt is bulk supply for food processing. They share a raw material and nothing else, including the customer.

Which to choose.

You are selling salt as a product: Artisanal, from a named origin, with the story documented.
Salt is an ingredient in something else: Industrial, specified on purity and particle size.
You need a stated purity: Industrial, washed and refined. Artisanal salt varies by nature.
The price gap confuses you: It is two different products. Stop comparing them per kilo.

Questions buyers ask.

Is artisanal salt healthier?

It contains trace minerals that refined salt does not, in quantities that are unlikely to matter nutritionally. What you may claim on a pack is set by your market's rules rather than by the process.

Can artisanal producers supply volume?

Not in the sense an industrial buyer means. Production is limited by hand labour and by weather, so treat availability as a real constraint rather than a negotiating position.

Which do I use in a food product?

Industrial, unless the salt is named on the front of the pack. Paying artisanal prices for salt nobody can taste separately is a marketing decision rather than a technical one.
